Spicy Pork Au Jus
2 boneless, center cut pork chops, trimmed
1 t. olive oil
¼ C. water
1 ½ t. sugar
1 ½ T. low-sodium Worcestershire
1 ½ T. balsamic vinegar
1 ½ T. low-sodium soy sauce
salt and pepper
saffron rice cooked according to package instructions
Sprinkle both sides of pork chops with salt and peooer. Heat a skillet over high heat; add oil. Add pork and cook 4 minutes a side, or until done. Remove from pan and set aside.
Combine remainder of ingredients. Add to pan and cook over medium-high heat until reduced. Serve sauce over pork chop atop saffron rice.

Yesterday, we played at Sophie and Hunter's house. The boys are so cute together. Hunter is turning 1 year old in June, so he is just a few months older than Hayden. They crawled around the house chasing each another! Hunter was grabbing Hayden's numi (paci), and then Hayden would poke at Hunter's face. Meanwhile, the girls dipped strawberries in chocolate. Messy messy, but super fun and yummy! Thanks for the fun play date!
