What y'all will need:
2 pounds of shrimp peeled and de veined
Olive oil
1 pound of angel hair pasta {or whatever you have on hand}
1/2 stick of unsalted butter, melted
zest and juice of 2 lemons
What y'all need to do:
Heat the oven to 400 degrees. Put shrimp on a sheet pan with 1 tbs olive oil, salt and pepper. Toss it all around and lay them in one layer. Roast for 6-8 minutes.
Easy enough....next:
Add pasta to salted boiling water. Cook until al dente about 3 minutes. Drain liquid reserving some of the liquid. Toss the angel hair with the melted butter, 1/4 cup of olive oil, lemon zest and lemon juice. Salt and pepper to taste and add the reserved liquid if necessary, then add the shrimp.
Super easy and so stinkin' yummy.
This quickly became a household favorite;)
