- Bring a large pot of salted water to a boil. Add carrots and cook 15 minutes. Drain and mash. Add melted butter, flour, baking powder, vanilla extract and eggs. Mix well.
- Preheat oven to 350. Transfer to a 2 quart casserole dish.
- Sprinkle with confectioners' sugar.
- Bake in preheated oven for 30 minutes.
I let it cool and sprinkled it with cinnamon before I served it.
Yum! I don't really like cooked carrots, but if you add sugar I might just eat them:) It sounds kind of like sweet potato casserole minus the marshmallows!
