Gone in 60 seconds

That's how fast salsa disappears when I make a batch.


Gary is a salsa hoarder.
He likes everything hot and spicy!


Gary and I judge Mexican food restaurants by how good their salsa is.
If it is spicy and fresh we go back :)

Making it at home is fun.
There is just something so fresh and yummy about homemade salsa :)

I have been making salsa for several years now,
and I'm pretty sure no two batches have been alike.

My mom, auntie and all my friends have recipes they share with me and I try them too.
I always write down the recipes, and then they end up tasting different.

This last batch was really good.

The recipes is below.





1 can of Rotel
{drain half the juice}

1 large can of whole peeled tomatoes
{drain all the juice}

2 tbs of minced garlic
{i used the refrigerated kind}
or you can just use garlic powder/salt


1 Serrano pepper

1/2 a medium red onion chipped into pieces, the blender will chop the rest. 


a couple sprinkles of cumin

salt and pepper

and

about a handful of cilantro.  I use fresh or the freeze dried. Depends on what I have on hand.

Dump all ingredients into a blender and blend it up to the consistency you prefer.

It is that easy!!

This looks good. I don't have a recipe...even though I did make PW's pico de gallo once and it was really good.

Good thing there isn't a shortage of mexican restaurants in Texas! LOL! They are EVERYWHERE! I love fresh salsa with LOTS of cilantro. Chilis is still my favorite!

Nummers. A few years back I made my own salsa using tomatoes from our garden. It was the best. I have no clue what the recipe was. My mother-in-law had made it before and it was her recipe. Seriously you just made me really need some. Too bad it is 11:24pm and my butt is too lazy to go down and get some. We just have the store bought stuff now :). Eating some is on tomorrow's to do list for sure.

Oh my gosh, Angie, this is too weird. Just TODAY I made salsa and was remembering your recent post about how you made some recently for your and Gary's sinuses, or something....I was hoping it would help me, too!
I have a friend coming to town tonight, I have to head to the airport soon, and she told me she loves Pioneer Woman's restaurant salsa recipe. So, I made it. Here it is for you. But first, I was so surprised that she called for canned tomatoes. And then I see you do, too. It never occurred to me to use canned- I'd only seen people use fresh from their garden. But, why not, right? I tried some and it's yummy. Here's that recipe, and I will be trying yours, too.

Restaurant Style Salsa
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cups Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
¼ teaspoons Sugar
¼ teaspoons Salt
¼ teaspoons Ground Cumin
½ cups Cilantro (more To Taste!)
½ whole Lime Juice
Preparation Instructions
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Thanks for sharing! Sounds like my hubby would get along just fine with your hubby. He puts salsa on just about everything. And he really can't get enough Mexican food!

I am going to try your recipe soon. Though, we don't like stuff that hot, so I think we will have to go with the mild Rotel for sure!

I am the same way you are about my Mexican food restaurants. I judge them by the salsa and the queso. If one of those aren't good forget it. I won't be going back :)

my recipe is called

Laura's Salsa (ha ha only b/c i don't remember where i got it and in my recipe box that's what is says)

it looks very much like yours

1 16oz crushed tom , undrained
1 hot rotel
1 reg rotel
1 med onion chopped
2 minced garlic
2 jalapenos chopped w/seeds
1/2 cup chopped cilantro
2 tbs lime juice
1 tbs sugar

mix it all in pitcher
makes 7 cups
