cheesy side dish

For some unknown reason I have always struggled with making broccoli rice cheese casserole.

The rice is never done, or the cheese just doesn't taste right, or the broccoli is too crunchy.
I get frustrated every stinkin' time.

Until this last time....

I think I got it down.
Thanks to my Auntie.

She gave me the best tip ever!  Use cheese soup.

I mix it all up right in the baking dish...1 cup of brown rice, cheese soup, and a 1/2 can of water.

then I add the cooked, chopped broccoli.

then I bake it at 350 for about 50 minutes...

finally I top the warm yummyness with shredded cheddar cheese,
and broil just until the cheese is lightly browned.

success!
