After being a bit under the weather I wanted to make my family something soothing and gentle on our tummies. I decided on this recipe and I am not sorry I chose this one.
I found a recipe card in a recipe box my mom gave me years ago.

1) can of cream of mushroom soup { i use the 98% fat free }
1) can of cream of chicken soup { i use the 98% fat free }
1) can of diced tomatoes
{recipe says Rotel, but i substituted regular diced toms}
1) 4.5 oz can chopped green chilies
1) can chicken broth
20 corn tortillas cut into quarters
2-3 boneless skinless chicken breasts cooked and cubed
{recipe says canned chicken, but i can't use canned chicken? i'm weird like that}
1) 8 oz package of shredded cheese
In a large bowl soak the tortillas in broth.
{Layla did this for me. [before she got sick of course!] she placed them in the bowl and sloshed them around with a spatula!}
Remove tortillas and set aside.
Add soups and tomatoes, and chilies to broth.
Mix well. {again my little helper did this, she's good with a spatula!}
Add chicken to the mixture.
Grease a 9x13 backing dish and layer, starting with
tortillas, mixture, cheese and repeat.
End top layer with tortillas.
They get so crispy and yummy on top.
Bake at 350 degrees for 45 minutes.
I am so thankful I made this yesterday instead of waiting until today. I baked it up last night right about the time Layla got sick. Needless to say, Gary and I didn't eat much. During the night when we were so sleepy and hungry (taking care of a sick munchkin) we wanted to warm it up again, but we waited. That hubby of mine had a wonderful idea!
He heated the casserole up and fried eggs to put on top.

Holy Moly...delish :) I like a man with good ideas,
especially when it comes to food in my {better feeling} tummy!
