I have been hungry for quiche for a month or so.
I haven't made quiche in years because the last time I made it, it was down right nasty.
I made the last one with tuna...blech. That was my first mistake!
This time I was pleasantly surprised.
The picture above is:
6 eggs
1 cup of milk
6 ounces of shredded cheese, i had Colby/monterray jack on hand
8 slices of bacon, i cooked them in the broiler...no frying = easy.
salt and pepper
2 chives, cleaned and chopped
3 heaping spoon fulls of sour cream
I had all the yummy stuff in a bowl ready to go and I needed a crust.
I tweeted about it, and one of my twitter/blog friends came to my rescue!
Oh how I love twitter and all the friends I have made through tweeting.
Thanks a million Ams!
The crust you see above is:
1 cup flour
1/2 tsp salt
1/4 cup olive oil
1/4 cup of cold water
I just mixed those four things into a bowl and then pressed into a pie plate.
Yes, it was that easy, and then I topped it with the egg mixture!
I baked it for 45 minutes in a 375 degree oven.
Look at that wonderful color. I love lightly browned cheese.
And bacon makes everything better.
And the inside is so eggy and cheesy and bacony. All mixed together it just sings in your mouth.
Anyway...
I gave the kids a slice for dinner that night, fresh from the oven.
Layla said, "This is the best egg pie I think I have ever had." Oh how I love that girl.
She does wonders for my ego when it comes to cooking. I am so happy that my kids will eat almost anything.
So, I am calling this quiche egg pie.

That is too funny "egg pie" I like that better anyways! That looks so good, I LOOOOVE quiche of any kind. Especially when it involves BACON!
