pumpkin pancakes

Every weekend the kids ask for two things...donuts or pancakes.  I don't cook pancakes.  I'm not sure why.  Gary is the pancake cook in our house, so I don't even try.  He just does it, and does it well.  Sunday morning he decided to bust out the pumpkin puree and try a new pancake recipe.



Pumpkin pancakes are so yummy.



He started with 1/2 cup of milk and one egg


then we added 1/2 cup of pumpkin puree
1 cup of bisquick
1 tsp vanilla
2 Tbs brown sugar


and don't forget the pumpkin pie spice... 11/2 tsp of that.


Then just stir it up really good and throw the batter on the griddle.



and watch them brown!



Layla created a special pancake for herself.  Yes, she had candy corn for breakfast...ha!!


Pumpkin Pancakes

1/2 cup of milk
1 egg
1/2 cup of pumpkin puree
1 cup of Bisquick
1 tsp vanilla
2 Tbs brown sugar
1 1/2 tsp pumpkin pie spice

Mix all ingredients in a medium bowl {wet ingredients first}. Pour by 1/4 cup full of batter on a griddle heated to high heat {350degrees}.  Flip cakes after 2 minutes. Continue to cook for another 1-2 minutes.  Take them immediately off heat.  Place them on a plate  and cover with a towel to keep them moist. 
Eat 'em up!
