chicken enchiladas

I haven't posted a recipe in what feels like forever!


Ingredients:

1 tbs vegetable oil
1 clove garlic, minced
1 onion, chopped
1 jalapeno pepper, chopped
1 tbs flour
1 cup chicken stock
1 (14 oz) can diced tomatoes, drained (i used rotel)
1 cup sour cream
1/2 cup shredded Cheddar cheese
2 cups cubed cooked turkey
8-10 flour tortillas
1 tbs chopped black olives



Saute onions, garlic and jalapenos in vegetable oil.


The smell of sauteing veggies is amazing!!



Add flour. Stir a few times to mix well. Stir in the chicken stock, about 1/4 cup at a time. 
Cook until thickened, about 5 minutes. 





Mix in the tomatoes (rotel) and bring the mixture to a simmer.


Mix chicken, sour cream and cheese in a medium bowl.


Fill each tortilla with desired amount of chicken mixture.


Place seam side down in a baking pan.


Pour the tomato sauce over the filled tortillas.


Top with olives and extra cheese


Bake for around 30 minutes or until bubbly.

These are a healthier version of a chicken enchilada in my opinion.  I usually prefer my chicken enchiladas smothered in sour cream sauce.  Instead, the sour cream was on the inside of these yummy things. You could also make these with corn tortillas, and turkey instead of chicken. If you don't like spicy use diced tomatoes instead of the rotel. 
I served these with charra beans made in my slow cooker and a dollop of guacamole on the side.

little bit of this, and that


I am sad to say I couldn't handle the Cinch diet.  I did great until the stress from the week caught up with me.  Gary being sick, me being stressed about keeping the kids away from him.  (Have you ever tried to keep your kids away from their daddy after he's been out of town for a week?) All they wanted to do was see him and hug is neck.  Bless their hearts.  They finally got to hug him yesterday.




Wednesday after lunch I was going nuts. I had that weird taste in my mouth, along with hairy feeling teeth...and a non stop head ache.  I also felt so sluggish.  Maybe that diet wasn't the best for me, or the stress was interfering.  I was so sluggish at one point on Wednesday I thought I might be getting the flu. And y'all know me.  I love food, cooking and preparing meals for the family.  If I had to eat another egg with spinach I thought I'd die.  I do love all those foods, but I dunno?  I just couldn't handle it this time.  I did it for 2 1/2 days and maybe I will try again soon.  And I lost 3 pounds. I don't know if it was worth it?

Gary is feeling much better.  Thank you so much for all the well wishes.  He even worked a bit yesterday.  He sat in his office and took a few phone calls.  He was struggling at around 4 in the afternoon.  I looked up from what I was doing and he was asleep on the couch.  Poor guy...the flu really got him down. The wild thing about it all to me is, one of Gary's co -workers was at the same convention in Indianapolis last week.  She got a flu shot and STILL got the flu.  She had is just as bad as Gary.  I'm still thinking we aren't getting shots in the future. Blah!




Yesterday was a horrible day for me.  It was great until I took Hayden to get a haircut and he refused to sit in the seat.  I took him to the bathroom and gave him a talking to, but he didn't care.  I was so mad at him.  He has never acted this way about a haircut.  I couldn't believe it.   So I grabbed him up and left.  I'm sure the people in Sport Clips thought I had lost my mind...they would be correct y'all.  I cried the entire way home.  I was so stressed out.  It seems like my bad day just got worse from there.  Everything went wrong and I just threw my hands in the air and cried some more.  Thankfully, today is a new day and I am so thankful for that.  I hope Gary feels better soon because Hayden really needs a haircut, and I don't want to take him.  Daddy can take him!!  Is it weird that I feel so bad about this, like I am a bad parent because I couldn't make my kid sit down in the chair to get a hair cut?  I feel like my two year old won this battle.  But was it even a battle at all?  Oh and while I'm complaining...Can someone please take NO out of the English language?  That is all Hayden says.  All the time, No, No, No.  Booo!


I am looking so forward to this weekend.  I think the weather is going to be nice!  I want to relax and maybe get a mani-pedi..hint hint Gary!!  I also would love a steak..hint hint Gary.

Booster Thon

This morning Layla bug had her first BoosterThon.  It was such a cool fundraiser for her kindergarten class, as well as other classes in her elementary school.  The kids ask family and friends for pledges and then have a fun run in which they run laps to actually earn the pledge money. We pledged so many dollars for each lap Layla ran. It is really the only fundraiser in the spring semester at her school.  I was so impressed with how cool it was to see all the kids running and having fun.  All the children in the entire school ended up getting pledges from all 50 states here in the US, so the teachers had to dress up in costumes for the day.  I loved seeing everyone--teachers, principals and parents involved in making sure the kids had a wonderful time.

Every time the kids passed the start/finish line volunteers would mark the back of their shirt for each lap they ran.  So fun and such a cool idea!  Here is Layla reeving back up after getting her mark.

Parents and teachers got to walk the final lap with the kiddos.  I was stoked to get to go through the tunnel!  It was such a fun adventure.  Bless the teachers hearts.  They are going to have some very tired kids on their hands this afternoon.  Layla ran almost 30 laps.  I am so happy for her and can't wait to talk to her more about her first fun run :)


I am such a silly emotional mommy sometimes.  I just get so overwhelmed with happiness. I teared up at this silly run.  What am I going to do at her wedding?  I'll be a nasty slobbery mess.  Ughhh!  We used to live about 30 miles away from our current house. What if we would have stayed there?  We moved because at the time it just wasn't home for us. This is home.  I feel like God helped us find this house, he helped us build it, and placed us here in this community.  He made sure Layla was in the best school for her right now. She is surrounded by amazing friends and teachers.  I just love to see her so happy at school.  She is a bubbly little girl and has many friends.  Seeing some of the other children running alone not socializing with other kids, it broke my heart.  I want to tell her to be friends with everyone. I hope I can raise her to be kind and compassionate.  I hope with God's help I can raise a sweet loving daughter and a brave honorable little boy.

here's the scoop

I very rarely watch TV during the day.  It may be on, but I don't sit down and watch it, unless it is The Young and the Restless.  I watch it every day.  Anyway, the TV was on one morning while Rachel Ray was on and Gary and I saw Cynthia Sass talking about her Cinch 5 day fast forward weight loss plan.  She actually has a 30 day plan, but the first 5 days are supposed to help you get over the hump and help with the cravings for fatty/sugary foods.  Gary and I both saw the segment and knew we could do it!  We just needed the perfect time.  One of my blog friends Kelli posted about it too...you can read her post here.

I have been letting myself eat whatever I want.  I count calories every day and enter them into an iPhone app.  I do better not eating so terribly bad if I hold myself accountable. Once the warmer weather hit I remembered the swimming pool...bathing suit and shorts weather.  Summer is not far away...my kids love to play in the water and go to our community pool.  I have to get these few extra pounds off.  Gary and I decided once he got home from his business trip, we would start the Cinch program on Monday.  I bought the groceries for the plan.  I literally ate everything we had here at home and only purchased the 5 foods so I wouldn't be tempted to mess up...haha!  I didn't want an excuse to wuss out.  Well, when Gary came down with the flu, I lost my partner.  But, I am still doing it.  I bought the book and read the entire thing on my Nook app.  The book is so full of recipes for the latter 25 day program.  And it of course has recipes for the 5 day fast forward and a shopping list.  All that for $13.80 and I didn't have to leave the house.  Not to mention I couldn't find the book in the few stores I went to. 

The food you can eat during these 5 days:



eggs
plain yogurt
raspberries
spinach
almonds

I started Monday morning rushing the kids to school.  I was so tired because Gary went to ER that night.  I almost gave up before I started.  But around 8 am I scrambled my egg, sauteed my spinach and measured out my raspberries and almonds for meal #1.  I ate the scramble pretty fast and took the raspberries and almonds with me on my way to take Hayden to school.  I drank a ton of water also...which is so important in any weight loss plan.  I drank a cup of coffee...with splenda.  You aren't supposed to have artificial sweeteners, but I can't do coffee black. And I was so tired I needed coffee.  I hadn't planned on having it, but life happens y'all!!

At around 12:30pm I made a parfait.  It consisted of yogurt, raspberries and almonds.  It was a little hard to swallow at first. So much thick regular non-fat yogurt...but I added cinnamon and it was WAY better.  And of course I drank water.  The plan says you can have tea, but so far I am just doing water.

All day I felt a weird feeling in my chest and stomach.  I can't explain it.  I wasn't sure if I was getting (flu) sick, or if it was the diet. Not pain, but a cool-slight burning. Also...my teeth feel like they have hair on them.  I can't brush my teeth enough.  I'm not a huge berry fan, maybe the berries make my teeth feel weird.  Besides being a little hungry in between meals those are the only side effects so far.

Dinnertime (5:30pm) rolled around and I made myself a hard boiled egg, a bowl of spinach (2 cups) and then I had a side bowl of raspberries and slivered almonds.  I chopped the egg and threw it on my spinach and put a ton of pepper on the "salad'.  I topped the salad with clementine juice. Surprisingly it was good.  I was about done with the raspberries by then though.  Ugh!  And my thought was I have 4 more days of this and a smoothie tonight.  Yep, since you are supposed to eat every 4 hours you have a smoothie late like at 10pm.  I tried so hard to stay up to have my last meal, but I was so dang tired from the day and the night before.  I fell asleep and missed my smoothie. Shoot.  I hope that doesn't mess me up. 

I woke up very hungry this morning, Tuesday.  After I dropped Layla off at school I had more time to make my breakfast.  I spent a few minutes scrambling the egg alone this time. (yesterday I scrambled the spinach and egg all together), Then I sauteed spinach after I scrambled the egg.  I put garlic and onion powder on the spinach and a touch of olive oil.  It was much better than the rush job I did on Monday morning. I ate it with blueberries and slivered almonds.  I don't know if blueberries are OK, but I can't do raspberries every single day.




I did a few things different than the plan recommends and I'm hoping those few changes will be OK. Let me just tell you, it was so hard to fix the kids dinner last night.  I wanted a bite of their mac and cheese, but I was strong.  The worst is seeing commercials for food.  I don't usually do things half way and I am determined.  I really like these 5 foods, so I don't feel too deprived.  I hope it gives me the jump start I need to curve my sweet tooth and more than anything I just want to retrain my brain.  I want to treat myself to good stuff once in awhile, not every day.  Lately I just grab a cupcake or candy whenever the mood strikes me.  Gotta get back on track and if I loose 8 lbs in 5 days then hallelujah!!

Monday night bullet points

  • Last night, Gary came home from his week long business trip sick.  Not just sick, but 104 temperature sick.as.a.dog.  I was so worried about him, so I loaded him up in the car  and took him to the ER.  Once there they listened to his lungs and realised they were full of fluid.  Poor guy.  They did ex-rays and pumped him full of fluids.  While gone on his trip he got the flu.  I don't think either one of us has ever had the flu.  He was in bad shape.  Thankfully he is doing much better tonight.  He is still weak, but much better.  I won't let the kids near him.  He was allowed to eat his soup at the dinner table with the three of us, but I won't let him touch anything in the kitchen or rest of the house. 
  • I am doing the Cinch diet.  It is a 5 day fast forward plan to jump start healthy eating.  You can possible lose 8 pounds in 5 days.  I bought all the groceries (spinach, almonds, raspberries, yogurt and eggs) for it and was ready to start on Monday...today.  Bad time to start a new eating program when your husband is sick. BUT I started and it was ok.  I wanted to emotional eat all day long, but I didn't.  I will post more about the eating plan this week.  I am just really tired tonight.
  • But not to tired to watch the Bachelor. Home town dates tonight!  Whoo hoo!
  • My kids realized that when they toot in the tub it makes bubbles.  Oh my goodness...the giggles that discovery produced.  I was worried they were going to make themselves do something other than toot.  They were trying so hard to toot.
  • And that is an ender...can't really post much more..nothing can top the inappropriate toot/potty talk.  ha!

1. I was allergic to chocolate when I was a kid.

True....isn't that so sad.  But true!  I am not a big chocolate fan now because I didn't eat it much as a kid.


2. I sleep with a snuggie blanket every night.

True....I sleep with my snuggie because Gary is always hot and I am always cold.  So I use my snuggie on top of my sheet and we are all happy.


3. I got married on the beach at sunrise.

True...it was awesome!!


4. I worked as an optician before I had kids.

True...I loved my job.  I worked for the best bosses ever.  I hated to leave them, but knew from the day I got pregnant I wanted to stay home with my kids.


5. I love mushrooms. Love love love them and could eat them at every meal.

My LIE....I do not like mushrooms.  They are slimy and nasty.  I do cook with them sometimes, and I made stuffed mushrooms for Gary because he loves them. 



6. I am very competitive when playing board games, cards and/or dominoes.

True....I love playing games and I get wild and crazy.  Luckily I haven't lost any friends because of it.

It is fun and super easy so I decided to play along. Oh and I totally knew her lie...which makes me so happy! I have been reading her blog for so long. how clean is clean?

I feel so much better after I clean my house.  Don't we all love a fresh smelling clean house?

I cleaned this morning and now I am tired but happy to have it done.  As I was cleaning I was thinking about other things I needed to clean.  My baseboards are dirty, there are marks on the walls...the kids probably drove a toy car on the wall to mark it up.  The cabinets in the kitchen and both bathrooms need to be lemon oiled.  My kitchen table and chairs need to be scrubbed.  They get so dirty and the daily wipe down doesn't always do the trick.

  I vacuumed, cleaned the bathrooms, kitchen, and mopped the floors.  I also dusted and continue my daily chore of laundry.  I feel like I am constantly cleaning and thinking of things I need to clean.  It is never ending.  Sometimes it overwhelms me.  But I realise the kids don't care.  I care...I want my house to be spotless.  But with 2 kids, a puppy and an older dog it just doesn't all get done.

So I do the best I can.  I make the beds some days and other days I skip making them.  When I finally can't see through the finger prints and dog paw prints on the glass back door, I clean it.  I steam clean the kitchen chairs when I just can't stand it any longer that there is a frosting stain that won't go away. 

My way of letting go of the house work is to have my house picked up.  As long as everything has a place and things aren't a mess I am OK.  I have had to find a happy medium because if I spent all my time cleaning I wouldn't get to go outside and enjoy this amazing weather!!  It is 75 degress right now.  As soon as Hayden wakes up from his nap and Layla gets out of school, we are playing in the back yard, or going for a nice long walk!!

Oh and one last thing...

Weather, can you go ahead and make the grass green?  If I have to clean up any more dry khaki grass drug in the house by the kids and dogs I may lose my mind. Kthxbye ;)

Valentine's Day 2011

We had a very fun and busy day today!  We started the day with chocolates and strawberry milk.  It was a fun way to start a sugar coated day.  They did eat fruit also, so I was ok with the candy...how many times can you eat candy for breakfast?



Layla's party at school was too cute.  They had an ice cream sundae bar.  Layla and her classmates had so much fun creating ice cream treats!  I enjoyed watching the kids dig through their Valentine boxes.  They were so excited to see all the cards and goodies they got from their friends.

Hayden was in sugar heaven waking up to candy...his little sleepy face in the first picture cracks me up! 
I loved seeing Hayden interact with all his frineds at school.  Those little 2 1/2 year olds are so stinkin' cute!  They laugh and giggle like crazy.  They had a pizza lunch and had cupcakes for a special treat.

Gary got home from a business trip last night late, so it was fun for us to drop the kids off at school and head out on a breakfast date. We ate at a fun little breakfast place we had never tried before.  I was in breakfast burrito heaven.  We opted for breakfast because the rest of our day was so crazy!  We both went to Hayden's party, and then I headed to Layla's party while Gary worked and Hayden napped.  Then I took Layla to gymnstics.  Us girls arrived home to find the boys outside playing.  We all ate a yummy lasagna dinner and then the kids pretty much asked to go to bed.  They were sooooo tired!!  I am tired too, I completely understand how they feel.  I have had a wonderful Valentines day celebrating with my 3 favorite people in the whole world.  I am so blessed.

quick update


I had the best weekend with my munchkins. Gary was out of town working, and we were busy the entire weekend which is very rare when Gary travels.  Usually we are looking for activities to keep us occupied.  I am thankful for the wonderful weather.  We met up with some fun friends to play at the park and soak up the sun Saturday afternoon.  We baked cupcakes and grocery shopped, and made Valentine cards, and ate too many cupcakes. 

The picture above is of them on our lunch date at Subway.  They were so big picking out their sandwiches.  They chose to sit beside one another AND even touched when I asked them to say cheese for the camera!  Hayden's little mouth is saying the loudest cheese ever. 

I can't wait for the kids Valentine parties tomorrow!  Layla worked really hard on her Valentine's box and she worked even harder addressing the cards to her classmates.

a bit of my yesterday

People often ask me what I do all day at home.  I decided to pick a day and document it for y'all!  Excuse the crazy grammar and me talking in 1st, 2nd and 18th person.  I am journaling here.

Here is a peek into part of my day.

At 5:15am Bogey the puppy heard the neighbor dogs barking, so he woke me up barking.  I got him settled and fell back to sleep until my alarm went off at 6:50.  Layla was at our door way asking to get in bed with us to watch a bit of TV.  She jumped in our bed until about 7:00.  Then Hayden was squawking at his door.  (he has a child lock on the inside of his door to keep him in his room at night.)  Layla opened his door and off they went to the playroom to turn on the TV.  I ran to the back door with Bogey, who will pee pee on the floor if I don't get him outside. 

Doggie potty break and puppy food taken care of.  Now, I am off to help Layla get dressed.  She goes off into her room while I check the school menu.  I vaguely remember Thursday being a day she may not want to eat in the cafe. {cafeteria}  Yep, some kind of ham wrap...ain't gonna work for her, so I make a turkey and cheese sandwich, pringles, and a juice box.  About the time I wrap up the lunch making, Gary enters the kitchen pouring milk for the kids.  Layla comes back into the kitchen with her denim skirt at her knees.  It doesn't fit. Really? Did she grow overnight? Sheesh.  So I leave the kitchen to help her pick out a different skirt.  Crisis resolved.  Shew!

After Layla gets dressed she decides she wants to wear pig tails to school, so I am off to the bathroom to fix her hair.  After the hair is complete it is 7:15am. Time for Layla bug to eat breakfast.  Waffle dipped into strawberry yogurt and milk.  As always, there is more talking going on than eating.  She is telling us about a boy she dreamt about last night.  Just a friend, but she was going on and on about how in her dream they were playing in the snow. Weird.  She never talks about boys. Uggh!  Coffee please.  Oh and Bogey done eating...gotta get him outside so no accidents on the floor. 

At 7:30am sharp dad leaves to take Layla to school.  I get Hayden his milk and cereal and he goes to the playroom requesting to watch 'To Sto 3' aka Toy Story 3.   I grab a cup of coffee and sit with Hayden for a few minutes in the playroom checking twitter and my email.  I realize I need to get started on the laundry so I am off and running to straighten the house and grab laundry baskets.  I get a load in the wash and take towels out of the dryer, separate a few more loads and then find Bogey chewing on one of Hayden's toys.  After a few minutes of chasing him around the house I come out the victor!!!  The toy was saved. 

Gary gets home from dropping Layla bug at school.  We have a cup of coffee together and visit for a few minutes.  He decides he wants an omelet and makes me one too.  One egg with a slice of cheese and a another cup of coffee!  We eat our breakfast, hang out for a little bit longer and then I panic...we can't find Bogey...he is either tearing something up, or doing his duty on the floor....panic panic!!! 
And we found him.  Laying on the floor in front of the fire with a magazine.



Hayden seems very content watching another movie (Toy Story 2), because by now it is 9:30am.  Gary already showered and headed to the office to work.  A shower sounds really nice, clean hair...heavenly.  So I put Bogey into his crate and tell Hayden I am going to shower.  He says 'OK' and I leave him sitting in the playroom.  Since Bogey is in his crate I decided to feed Harley dog.  Everyone is all set and I jump into the shower!! Awesome...I usually shower at night and let my hair air dry, but today I am going to blow dry my hair and put makeup on...whoo hoo :)

After my short but nice shower I jump out, towel off and head to the playroom to check on Hayden.  He is in my bedroom.  Bogey's crate is open...no Bogey in sight. WHAAAAA???  Seriously?  Hayden let the flippin' puppy out of his crate!!!!!  There is adult dog food down in the kitchen.  Bogey ate adult dog food one time before and it was disastrous. Sorry for TMI, but the stinky toots of a puppy are not fun to smell.  I am sooooo mad!  So I take off running, towel on my head, robe on...to the kitchen and the dog food bowl is licked clean.  Shoot.  I don't know if Harley ate it all or if Bogey ate it.  Harley never finishes a whole bowl of food. She is a little lady, always leaving a bit. I'm 95% sure Bogey hogged down her food.  I am still so mad at Hayden.  Why would he do that? Oh because he is 2?



I stick Bogey and Harley outside in the freezing weather.  I hope Hayden watches a little bit more TV.  I will blow dry my hair.  I will!!!   So I section off my hair and blow a few strips dry with the round brush and then I run into the playroom to check on Hayden.  He is fine...I let the dogs back inside and finish blow drying my hair.  I am mad because it is frizzy.  Oh well.  Gotta get busy checking on all the crazies in my house.

Hayden and Bogey are fighting over toys in the playroom and Harley is sleeping.  Nice.  I see that now it is 10:30 and I can catch the last few minutes of The View.  I have a love-hate relationship with The View.  I usually get all mad and worked up when I watch it.  I RARELY watch TV at all during the day.  As you can see I barely get to sit down...so this is a treat!  I plop down on the sofa, tweet about watching The View and Hayden walks into the room. "Mommy my bowbow hurts bad!!!" OK...cool. I think he needs to do #2, so I take him to the potty.  We read books and sit and sit and sit.  We chat and count and read more books.




Twenty minutes go by and suddenly it dawns on me...I have a puppy in my house that ate adult dog food.  I can't leave him unattended.  He will do #2 on my floor.  Ughhhh!  So, I tell Hayden to sit tight for a minute while I run to let the dogs outside.  Whew...after a quick scan of the house, no accidents to report!  Whew!  I head back into the bathroom to find it vacant.  Oh Lordy...the boy is naked. Where is he? Yep you guessed it: he pee pee'd on my kitchen floor. SHOOT ME NOW!!  See pic below...scene of the crime.  I toweled it up and sanitized the area.


I take Hayden back into the bathroom and talk to him about what he did wrong.  Clean his mess and by now it is 11:10 or so.  Now it is time for Hayden's lunch.  He usually eats around 11:30am so he can go down for his nap about 12:30pm.  Peanut butter and jelly on whole wheat bread and he asked for orange juice.  Got it!  He is all set having a picnic in the playroom.  I turn my back to leave the room and he gets jelly on the carpet.  Seriously? That fast?  Sheesh!  I run out to get the carpet cleaner.  Phew!





I meet Gary in the kitchen.  He has emerged from his office for lunch.  He sees the carpet cleaner and thinks doggie doo...wrong.  But the jelly came up...the cleaner is awesome!  Gary takes one look at me and says,
 "You look nice babe, I really like your hair. I didn't know you had a brush?"

We love each other like that....I smack him on the arm and walk off.  I feel sorry for him.  Since we were snowed in a week ago I have only applied make up once.  I washed my hair several times, but didn't blow it dry.  I don't have super curly hair, but when it air dries is is almost frizzy and wavy.  Anyway, he has only seen me in yoga pants and pj's for 2 weeks now. 

Gary makes his lunch.  I make myself a salad and sit down to eat it only to realize I didn't check on Hayden.  Sometimes I worry about him being in the playroom eating alone and choking and stuff. He is fine and ate his entire sandwich and asked for another one.  Well allrighty then.  I won't turn him down.  So instead of eating my salad I make up another sandwich.  I guess I left the pet gate down and Bogey got into the playroom and tried to eat Hayden's chips.  Once again chips would not be good on a puppy tummy.  So I get the sandwich made and delivered and wrangle the dog out of the playroom.  Bogey goes outside again for the bazzillionth time.  And I sit down to eat my salad.  

Bogey is totally tearing up the back yard.   I can see him running and things flying around.  He is running with the broom.  When I get up to see what he has next it appears he has a cigar in his mouth.  Whatever!!  I'm assuming it is a stick of some sort, but since we don't have any trees in our back yard I wonder where he got a stick.



Hayden comes into the kitchen asking what I have in my mouth...poacher!!!  He takes one look at my salad and decides he isn't interested.  Off he goes with his gun to shoot through the office windows at dad.  Gary welcomes the interruption and allows Hayden, Bogey (who I just let inside from being outside) and Harley into his office.  It gets loud and rowdy in there and then trouble erupts.  Bogey tee teed on the office floor, and he is shoved outside again.  Gary cleans his floor and I wrangle Hayden into his room to change his diaper and put him in bed for his nap.  Finally, I will get to sit down in a few minutes! But first I must finish eating, put away my dishes and fold the towels that have been in my polka dot chair all morning.  Gary comes out of his office to kiss Hayden before bed and helps me fold the towels...he is so sweet.

I get the dogs calmed down and I finally sit down  I notice it is about 1:20pm.  Gary is in his working, Hayden is napping and the dogs are sleeping. Whew! Me time = writing this post and checking email/twitter.


I jump up remembering that I haven't set anything out to thaw for dinner.

I'm thinking cupcakes also to celebrate Valentine's Day...if I have time.  Who has time?  Ugh!



It has taken me almost an hour to write and add pictures to this blog post.  I have to pick Layla up from school in about 30 minutes.  Hayden will be waking up very soon from his nap, and I must get the chicken into the slow cooker.  I'm glad I had the time to share part of my day with you.  I would really like to document the rest of my day, but I'm exhausted.  I can't wait to eat my chicken and watch my Thursday night TV shows, but first I must put the puppy outside and get through the rest of this day :)  & hopefully I will get a cupcake...oh and incase you are wondering...bed time is my favorite time!!
