I made taquitos baked not fried for our SuperBowl celebration on Sunday.
One of my bloggy BFF's Laura @ Cowboy Boots and Baby Booties always keeps me in her cooking loop. We share recipes like crazy, back and forth!
I love the recipe part of blogging. The reason??
Usually people have made the recipes and so they are tired and true!
Laura introduced me to the website Our Best Bites. If you click on the OBB link I used you can see their version of these goodies. I pretty much used their recipe, but I did change a few things.
I didn't have fresh cilantro, but the Litehouse seems good enough. I also didn't have lime juice, only lemon. I didn't have green salsa, so I used Clint's red salsa. And I didn't have pepper jack cheese, so I used mild cheddar. Oh, and BIG change...I used shredded pork...not chicken.
I was craving pulled pork sliders so I made a pork butt in the slow cooker and diced up cooked pork instead of chicken. It turned out to be an amazing choice!

The filling...pork and all the added ingredients = WONDERFUL and so flavorful!

These little boogers were super hard to roll though. Rolling corn tortillas is torture. I did all the things they say do when rolling them, but nothing worked...see the cracks in the lower tort? Sheesh! I said a few choice words. Silly I know, but I am so OCD when it comes to cooking. I want my recipes to turn out perfect and great. Anyway, even though there were a few cracks they turned out good.

Did I mention they aren't fried? They were sprayed with cooking spray and topped with salt prior to baking. AND crispy....you wouldn't believe they are not fried.
We dipped them in lite sour cream mixed with Tapatio...a hot sauce similar to Tabasco.
Look for it at your grocery store...it has the best hot and spicy flavor and not near as vinigary [if that is a word] as Tabasco.

OBB is the best and I've been wanting to make these for quite some time now. You crack me up with the cracks! I would love that recipe for the pork. I've used McCormick's pulled pork packet but I'd like to use something else. Glad you enjoyed and I'm glad you shared. It's the motivation I needed. I think these freeze well too :)

ReplyDeleteOh, that sounds mega good! Did you try heating the tortillas up before you rolled them? I hate it when my tortillas crack!!!
