Summer is here and that means the heat is on here in the Lone Star State. I have a hard time making dinner choices when it is so hot. After a long day in the summer sun the last thing I want to do is heat up the kitchen with the oven.
My parents have a garden and they were so nice to give us these tomatoes. They are so juicy and delicious. Last night we ate them with salt and pepper only, as a side dish with dinner. YUM!
We got a ton of tomatoes and I will not let them waste. I think I will make salsa for sure, and eat them in salads, but Gary and I LOVE bruschetta. Have you ever had it? I really honestly thought I had blogged about our love for bruschetta in the past, but I don't see the post.
Here is my recipe. I found this new dressing...I usually get a simple vinaigrette. But I just had to try this fun bruschetta Italian dressing. It is gooouuud!
You will need diced tomatoes, salt and pepper, fresh basil, but I had to use dried basil.
And dressing.
dice the tomatoes,
Sprinkle the spices all over the tomatoes and then top with dressing.
Give it a good stir and then cover and chill for several hours.

Best Maid are the best pickles in my opinion.
They have nothing to do with bruschetta, that is just a random statement because I saw them in the fridge. Pickles do not last long in our house. I wish we had a pickle tree. Anyway, sorry...back to the bruschetta.
After the tomato mixture is nice and chilled here comes the best part. Use it as a topper.
We love to use bread. Thinly sliced toasty bread. BUT we also like to watch our figures.
So we frequently eat it on Triscuits.
Cracked pepper and olive oil triscuits are the best. The children don't like them, so that is the best part....Gary and I get to enjoy the entire box! It's the little things folks.
We love this as a before dinner appetizer, or as a light lunch. It can be more filling if you eat it on bread.
Or if on crackers you can just snack on it all day long. It is a cool summer treat!

I don't care for bruschetta, because I don't like tomatoes. I know, I know! But I agree, Best Maid is the best brand of pickles. And cracked pepper & olive oil are the BEST triscuits :)

That sounds so good! We have gotten a few tomatoes out of our garden this year...I need to try this recipe with a some of them! I love the idea of putting it on Triscuits too:)
Yum! I've never made it myself but I love it! I eat a ton of pickles. Great low cal snack. I've never heard of that brand though.
