I love enchiladas. I really love them. When Gary and I were newly weds I loved to cook for him. I wasn't the best cook, but I really enjoyed practicing. I tried a million enchilada recipes and didn't like any of them. So I decided to keep it simple. About 10 years ago I came up with this recipe. It is always a favorite in our house and the kids love it too!
Ingredients:
1 lb ground beef
1 packet taco seasoning
8 flour tortillas
1 can enchilada sauce
1 can of Rotel
1 lb Velveeta
shredded cheddar cheese for topping
What to do:
Brown the beef, add taco seasonings and drain.
Add 1/2 the enchilada sauce to the beef.
Fill the flour tortillas with the beef mixture and lay them seam side down.
Slice Velveeta cheese into cubes and place in a microwave safe dish.
Add Rotel and microwave until melted stirring often.
Pour the melted queso cheesy mixture over the filled tortillas.
Pour the enchilada sauce over the queso.
Top with the shredded cheese.
Bake in a preheated 350 degree oven for 25 minutes.
This recipe is so quick and easy.
I actually prefer it with corn tortillas, but the family loves flour.
Go on ... get to the store, buy the stuff and make some yummy enchiladas ... it's that easy, and you're welcome!
