Strawberry pie

My goal after receiving our produce basket this week is to try new recipes with the fun things we got.   Layla's favorite fruit:  strawberries.  Since we got 4 lbs she is in strawberry heaven.  I knew I wanted to make a cake or pie and I'll for sure make strawberry muffins.

I googled and searched and found this recipe at one of my favorite recipe websites.  After reading the recipe and exploring Gary's grandmothers Better Homes cookbook from 1968 I new I could do this pie thing!  I am not a baker at all and so I was worried I'd mess it up.  I hate when recipes don't turn out, so I may over do my research a bit.  Anyway,  the only thing you bake is the crust.  Score!  




Once I baked the crust I was worried. It was ugly, but I covered it completely, so you can barely see the crust at all. 

Ok, so here it is.


 Ingredients:

1 unbaked pie crust
3/4 cups sugar
2 tablespoons cornstarch
1 cup water
1 small package strawberry Jello
4 cups sliced fresh strawberries
fresh mint


Bake crust for about 10-12 minutes at 450 degrees.  Cool on a wire rack.

Meanwhile in a saucepan, combine sugar, cornstarch and water until smooth.  Bring to a boil and cook until thickened.  About 3 minutes.  Remove from the heat and stir in Jello until dissolved.  Refrigerate for about 15 minutes.




Arrange sliced strawberries in the crust. Pour the Jello mixture over berries.   It looks so good at this point!  YUM! Refrigerate until set.  Garnish with mint and whipped cream!




I think this pie will be a family favorite this summer.   It is so delicious and refreshing.  I can't wait to make it with pineapple or even fresh peaches!    I have a coconut I need to use too.  Don't they make pina colada flavored Jello?  That would taste awesome!
