I think it is quite funny how yesterday I posted about losing weight and a low calorie fajita recipe and today I'm posting about making a cake. See the problem here. I just love to cook and eat! The kitchen is my happy place!
I always make a big deal about birthdays around here. I love making my people feel special on and around their birthday. One thing I so is make/buy their favorite cake. This year Gary wanted a cookie cake. We don't have "The Great American Cookie Company" here in our new town, or anywhere near us. I decided to make the cookie cake myself.
The recipe I found on pinterest was very simple, but I was still nervous about making it. I am not the best baker. I used a 32 oz package of chocolate chip cookie dough from the dairy case. I topped the dough with about 1/3 cup of light corn syrup and mixed it up.
I smashed it onto a Pam sprayed cookie sheet with wet fingers, just like recommended.
I baked it in a 325 degree pre-heated oven for about 30 minutes. I really watched it though. I was so worried I'd burn it, and all ovens are different. Anyway, it turned out just fine. Some of the cookie poured over the cookie sheet, but I just trimmed it off. Once it cooled I decorated it with store bought icing. I think the writing looks very silly, but it tasted good and the kids loved it.
I was very happy with everything about this recipe. BUTTTTT I had to throw the pan and left over cookie away. Seriously ... it stuck to the pan so bad. I tried to scrape it off, but it was just stuck. Next time I bake a cookie I will use parchment paper. Hopefully that will solve the sticky problem! I have to say I was greatly pleased with this pinterest pin. The cookie cake was a huge hit for Gary's birthday.

I take my baking stone (round one) and I draw a circle on a piece of parchment paper (really big) and then put the whole paper on the stone ...usually a circle about 3" from edge since the cookie spreads
then i press the cookie dough to the circle edges (the one I drew on the paper)
then bake
it turns out just like the ones at the mall...haha
this way you won't throw pans out anymore!!!

It looks delish! My aunt and I made a cookie cake for my cousin's little girl this weekend. I made sure to spray the pan really well with Pam first because I was afraid it would stick. The only problem we had was that it was still really gooey in the middle!
OK I want to try this REALLY bad for Luke's birthday this week. Except he hates cookie cake so maybe I can just try it this weekend for myself.
